Salad recipe with egg and spinach

Here is a recipe for a hearty salad with eggs and spinach:

Ingredients:

For the salad:

4 eggs, hard-boiled and cut in half
6 cups fresh spinach leaves
1/2 red onion, finely chopped
1 cup cherry or cherry tomatoes, cut in half
1/4 cup minced mint
1/4 cup sesame, toasted (optional)

For dressing:

3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon dijon mustard
1 teaspoon of honey
Salt and freshly ground black pepper to taste

Instructions:

Boil hard-boiled eggs, cool and cut in half.

In a large bowl, combine spinach leaves, egg halves, red onion, tomatoes and mint.

In a mixing bowl, combine olive oil, balsamic vinegar, Dijon mustard, honey, salt and pepper. Mix well.

Pour the dressing over the salad and mix gently so that all the ingredients are evenly coated with the sauce.

Sprinkle toasted sesame seeds on top (if using).

Serve the salad with egg and spinach immediately to preserve freshness and flavor.
